Having spent a few hours
playing Rock-paper-scissors
decided to look for something more.
Like more sophisticated (but playable) version of aforementioned game.
After a few hours of googling found this
and this
rock paper scissors lizard spock

What else?

i will try to dig out a reference, but the Japanese in the seventeenth century had a very wide range of RPS type games, including whole-body (i.e. using the whole body to make the requisite shape, rather than just the hand) variants.

There is that Japanese game: solder beats lion beats old woman beats solder.
You make corresponding faces.
It is fun
I just want something a bit more intellectually challenging

Not well explained (the attacker simply starts and
that's the only difference from defender)
and there is one (easily fixable) flaw:
The players tend to make pauses for thinking.
A long pause counts as a lost point. Evil Smile

According to Sheldon:

Scissors cut paper.
Paper covers rock.
Rock crushes lizard.
Lizard poisons Spock.
Spock smashes scissors.
Scissors decapitate lizard.
Lizard eats paper.
Paper disproves Spock.
Spock vaporizes rock.
Rock crushes scissors.

There is this game called five-ten I used to play in Hong Kong. Here's what I remember:

You can close both hands (zero), open one (five) or both (ten). You opponent can do the same, and you have to guess the total (between zero and twenty). So if you open one hand and say fifteen, you need your opponent to have opened both hands. If you get it right you score a point, and you keep playing. If you get it wrong, it becomes your opponent's turn to play.

It is quite similar to rock-paper-scissors i.e. you have to anticipate what your opponent will do... The locals play it so fast it is hard to keep track of what is going on. It is best played drunk, and can result in you waking up next to two chicks you've just met, but I'm digressing...

Has anyone played that?

Yeah, 5-10 is a really popular game in KTV's and thai discos. You do usually drink if you lose and it can end up with two chicks you barely know. At least as I've played it you need to guess two right in a row to win. I am the reigning champion of this game in the Singapore Thai Disco division, a fact made more astonishing since I'm like the only Ang Moh that regularly goes to those establishments. Fun games and they help with any language barrier issues. It's not hard to get very good by learning to do subtle suggestion and read how someone's mouth moves. Their shape will be different depending on if they are saying none, 5, 10, 15 or all before anything comes out. People also rarely guess fifteen. I think they just forget about it as an option.

The variant of RPS that I've played, which also results in drinking and potentially terrible decisions goes as follows. You start out make a clap, then shoot rock, scissors or paper. If you tie, clap again and then shoot, if one side wins, you clap and then put your thumb either up, down, left or right. If both thumbs are in the same direction, the person that lost the original shoot on RPS loses and drinks. If thumbs are in different directions you clap and shoot RPS. If you get very good at it you play almost impossibly fast. You can do a shoot and a resolution in 2 seconds. One thing to keep in mind with RPS is that most people are more likely to throw rock and less likely to throw scissors. Also people tend to throw what would have won the previous shoot. So if you beat them with a rock on scissor they will probably throw paper next.

Nero - when there was way too much drinking involved it would degenerate into just 5-10 only, so each side uses one hand.

[edit: this is a pretty interesting article on the subject]

But it is fun fun fun.

My middle schoolers seem to enjoy Chopsticks, a variation on a Japanese game.
